When do they calm down/mature a bit?
I know they are high energy dogs so don't get me wrong, I know what I bargained for
But when do they get somewhat calmer, or when did you feel that puppy-hood was over, to put it that way?
My staffy girl is 7 months who's in general well balanced, obidient and a joy to have in the house, she doesn't pull the lead, and handles passing strange dogs well,, BUT goes totally bananas when visitors come and when she meet dogs she knows well, guess its her expectations bowling over, she's sooo omg-I'm so happy I could die-happy... But even though we practise on this, she has to sit before greeted, and is ignored when not behaved, it doesn't seem to change. So: will TIME help? Oh, please say it will

It will, just keep reminding her what is the correct behavior and what's not and she'll get it eventually they never calm down though!

Do you want the bad news or the good news
They usually go through teenage years up to about 2 but this depends completely on the individual dog. The teenage years can be very testing and many people have to go back to basic training.
The good news is that it will pass. Consistent training is the key. By middle age you should have a well balanced happy, energetic controlled Dog if you keep the commands/training consistent

We train obedience (normal everyday obedience) every day, and we take basic classes at a dog-school
This is my third dog, and I am very consistent, so she behaves beautifully, but gets OVERexcited when she greets familiar people and it takes extremely long time for her to land, so I have to bind her in her lead till she calmes down.

It really does depend on the dog - Moo has always been very calm and chilled got her at 10mnths and have been very very blessed

As others have said, it depends on the dog! I know 9 year olds that still believe they're puppies and 2 year olds that are totally calm. I'd probably say 3 is a general time, but could be before or after. Sorry for such a vague answer!

Suki is very well trained but even at 4 she does still have her moments. A proper diet and sufficent exercise do help though

Bo is 11 months and behaves like a lunatic when he meets people or dogs. Actually, with dogs he's not too bad and just sniffs and plays energetically but with people there's no stopping him. With visitors he'll stay in swivel-eyed crazy mode the whole time they're there, for three or four hours no problem, and that's after 2 hours exercise. Nothing has the slightest effect. That's just the way he is and forever will be. Everyone has to admit, though, he's certainly got character!

Lol, that sound just like my Swiper, the part about with people. He goes tail chasing crazy when we have guests over. He is 29 months old now and the down stay training has surprisingly started to work better, even if only for a second or two haha.
My thoughts to the OP on the calming down age is somewhere between 3-5y/o
