Tip for Crispy Roast Potatoes
For great crispy roast potatoes:
Preheat oven to gas 7 or equivalent.
Peel potatoes and place in a large saucepan with boiling water to cover. Simmer for about 10 minutes then drain completely, giving the saucepan a good shake to bash the potatoes around a bit. Heat a good amount of oil in a large roasting pan in the hot oven until ferociously hot. Carefully place the potatoes in the hot oil then sprinkle a little salt all over them. Roast in the hot oven for about 45 minutes until golden brown.

instead of sprinkling them with salt before cooking try dried rosemary,yummy!

i looove proper roast potatos, crunchy on the outside and fluffy inside, especially with christmas dinner

if having beef cook fully drain off fat .
bring potatoes to the boil with a sprig of rosemary in water
mix beef dripping with equal amount of goose fat or cooking oil
whack in the oven on super high temp
par boil pots for 15mins while oil heating(light boil over simmering heat )
then drain pots and dry
carefully add pots to hot oil season with fresh ground pepper and fresh ground salt
and back into oven at 220 or 200 fan oven for 40mins
sit down and enjoy lol
