Coconut & Cherry Cake Empty Coconut & Cherry Cake

I have just made or rather have in the oven right now, a delicious looking coconut and cherry cake. Really hope this turns out OK will be having some for tea tonight.

The only thing is I have had to adapt the recipe a little because I didn't have the solidified coconut milk as in the ingredients list. I did have some powdered coconut milk which I mixed with some milk instead. Hopfully this should be OK and hubby can enjoy his afternoon tea with a slice later. I did look to the heavens when I put it in the oven.

Will let you know how it turns out.

don't do coconut or cherries, how about a nice Blackcurrant jam sandwich cake , I will send you my address, and a nice corned beef and tatie pie as a warm up would be gratefully accepted
