That's about the same recipe that I would use, but not the beef dripping I would use vegetable oil, I know this doesn't give quite as good flavour but never mind.

That's defo the secret plenty of air n the batter. I must admit I buy Auntie Bessies dried batter mix and just add water its fab!! I do like to make my own though

it simple saz there 2 way
1) get 3 same size glasses and make sure the plain flour, milk and eggs are the same level and i sieve the flour in an bowl and use my electric whisk and let it sit for 25mins before putting it in the oven
2) the website i posted here they turn out great also
