Spanish lentil salad

A healthy salad

I tin cooked green lentils or you can do your own
Red onion or spring onion
Peppers
Olives
Steamed asparagus or green beans or broccoli
Cherry tomatoes
Lemon juice
Cider vinegar

Finely chop all the veg ( you don't need to chop the green veg as fine) and add the lentils. Use lemon juice and cider vinegar to flavour. Olive oil is optional.
