Post by Steve Mon Jan 17 2011, 14:32

i've bought some fresh mackerel fillets (i've been watching the jamie oliver thing on channel 4) so i'm doing my bit by stop eating tuna. Laughing

after making a right mess of it on fridays i decide to get them to clear it up and remove most of the bones but the bloke said the pin bones (i think that what he called them) are still in the fillets Tongues does anybody know the easy ways of removing them.

It's good to have fish with bones. You can make stock with the bones that make your next fish dish 10 times tastier.

Dice an onion, add fish bones, butter, juice of a lemon, 3 or 4 peppercorns, and a bayleaf (and a glass of white wine if you have one to spare.) Cook it all together for about 10 mins, then cover with some water and simmer for 30 mins. Strain, keep the liquid in the freezer until needed.
