Cakes
Right tomorrow I am going to attempt a lemon drizzle cake (which I have done before) and a chocolate and lime cake that's if I don't have too much wine, when out to lunch!!

Yeh Kathy I actually thought of doing the same concept as the lemon drizzle but with the lime over the chocolate cake. Do you think it would work? xx

Good luck hun, I only ever made a cake once and it was horrible!! My boyfriend at the times family came round as it was his birthday, so I cut the cake up and we we're having it with a cuppa, I started eating and it was disgusting, I kept saying please don't eat it but they were all too polite, saying it was OK, I wanted the ground to open up and swallow me!!

Lemon drizzle is my favourite!! Chocolate and lime sounds odd to me but a lot of people have mentioned it before! Ive heard of lime drizzle cakes so why not with chocolate cake Can we get some photos so we can dream of eating them?

Well I actually used my Victoria Sponge recipe out of my real old fashioned cook book. Just added lemon juice and grated rind of 2 lemons.Then skewered some holes in the top whilst still hot and poured lemon syrup (3 tbsp. of lemon juice and 4 tbsp. of icing sugar) over let cool before taking out of tin.
Recipe and method for my sponge as follows:-
4oz castor sugar
6oz sr flour
1/2 teaspoon baking powder
4oz margarine
2 eggs
juice and grated rind of 2 lemons.
Syrup:-
4 tbsp. icing sugar
3 tbsp. lemon juice.
Method:-
1. Cream fat and sugar until soft and fluffy
2. Gradually add beaten eggs
3. Add rind and juice of lemons
4. Lightly mix in sieved flour and baking powder
5. I always add a touch of milk at this stage to make the mixture runnier
6. Pour in greased and lined 8 inch loose bottom cake tin
7. Bake in oven gas mark 6/8 for 20/25 mins
8. when cooked (after testing with a knife) skewer several times through the cake and pour over the syrup. Leave to cool in tin before turning out.
Hope you got through all that!
