Crab linguine

For 2 people, rough ingredients and instructions

Table spoon of olive oil
Linguine/spaghetti
1 can white crab meat
1 large garlic clove, finely chopped
1 Red chilli, finely chopped
Bunch of spring onions, chopped
A few sun dried tomato's, finely chopped
1 glass white wine
1 heaped tablespoon sun dried tomato paste
Half a lemon
Handful of fresh flat leaved parsley, chopped
Bag of Rocket
Black pepper
Parmesan

Add pasta to a pan of boiling water, return to the boil
Heat olive oil, on a low/medium heat, add garlic and chilli, fry for a minute
Add spring onion and fry for another couple of minutes
Add the wine, sun-dried tomato's and paste, season with pepper, cook on a medium heat for 3/4 mins until sauce starting to thicken
Add crab meat and parsley, warm through for a couple of minutes and add a couple handfuls of rocket and squeeze over some lemon
Drain pasta and portion to bowls
Top with sauce, add some more rocket
Grate over Parmesan and serve
