Gazpacho Empty Gazpacho

About 30 years ago, in Javea on the Costa Blanca, I had my first gazpacho, and I have been trying to recreate it ever since. Basically it was a thin clear red soup (cold) which came with bowls of various finely chopped-up raw veggies like tomatoes, onions, cucumber, peppers and you just added spoonfuls of one or the veggie to your bowl as you supped - it was fantastic!

The local supermarket in Javea sold packets of make-your-own gazpacho soup which came a very close second and all one had to do was to add the bowls of finely chopped up veggies.

All the gazpacho recipes I have been able to find have not only included bread to thicken it, but also include bucket loads of veggies which need to be whizzed up and basically result in a salad smoothie, which is not what I crave.

I have long searched for these packets of make-you-own gazpacho in England, to no avail. If anyone knows where they can be purchased, I'd love to know! Or, a recipe for the thin clear red soup base (not a sludge at all) would be equally welcome.

Can anyone help?

good luck in your search Lynda , googled it and only found that its not supposed to be thin a watery or "like a tomato smoothie" personally if it ain't hot it gets sent back

Gazpacho, the granddaddy of all uncooked soups, has several things in common with a smoothie. It’s a cold, thick liquid containing ripe, juicy produce. You make it in a blender. It’s as refreshing as a good tUnE-yArDs song on a hot summer day.

But just because gazpacho shares certain characteristics with a smoothie does not mean it is a smoothie. Perhaps this is obvious to you—in which case, good for you—but it is unfortunately not obvious to everyone. Gazpacho recipe after gazpacho recipe calls for ingredients that would only make sense if you were trying to make a tomato smoothie: sugar, citrus juice, tomato juice. You may as well throw some ice cubes, yogurt, and soy-protein powder in there and drink it with a straw after yoga class.

I understand the impulse to add tomato juice to gazpacho. You do, after all, need some liquid to bring gazpacho to the right consistency and to help the blender do its work (if, that is, you’re using a blender, about which more below). But if you’re using fresh, perfectly ripe tomatoes—as you should—they’ll contribute plenty of juice on their own. And you’ll be adding other liquids that play important roles, too: olive oil, which helps give gazpacho a creamy texture, and sherry vinegar, which exaggerates the tomatoes’ acidity, giving the soup its characteristically zesty flavor. If, after adding these, your gazpacho is still too thick, you can add the bare minimum of water needed to thin it out. If you happen to have tomato juice in the fridge, twiddling its thumbs and waiting to be useful, you can use it in place of the water—but don’t go crazy glugging it in. Under no circumstances should gazpacho become thin and watery.

Thank you Dave - I came across this quote too. Watery it was not, but it was clear and no way thick and sludgy. It had to be tasted to be believed! A blend of mouthfuls of finely-chopped crunchy salad veg coated and mixed with this magic fluid.

And yes, Hayley, it was very very nice!

Claire, thank you for looking Mwah Mwah. A ready-made soup might just be what I'm looking for. Never thought of googling Spanish food retailers, I'll do it in a minute or so, thank you for the tip!
