Easter Biscuits
I love the smell of biscuits baking in the home so I'm off to make these tomorrow morning:
Easter Biscuits
175g Butter
175g Sugar
1 Egg
350g Plain Flour
Pinch Salt
Quarter teaspoon mixed spice
75g Currants
For the Glaze: 1 egg white lightly beaten, 1 tablespoon caster sugar
Pre heat oven to 180 oC Gas 4
Grease a baking sheet. Cream together butter and sugar in a food processor add egg, flour, salt, spice and currants to make a fairly soft dough.
Turn out onto a well floured surface knead lightly and roll out thinly.
Cut out circles with a 3 inch biscuit cutter. Place on the baking sheet. Bake for about 10 minutes until golden brown.
Remove from the oven and brush on the glaze and sprinkle with a tablespoon of caster sugar. return to the oven for a further 3 minutes then transfer to a wire rack to cool.
