I would leave out the cheese too, the oil is just there to cook them in Steve, maybe use just a little to give them some colour.

what i'm thinking is making small one and just have them to snack on thru out the day?

If you don't want to fry them, just brush a little oil on each side & grill them. That way you use the minimum of oil but still get the nice colour!
